The easy-delicious recipes made me really look good when we took care of the exhausted-new parents and baby for two weeks.
Of the sixteen recipes that I tried, during our two-week visit, the family said that every one turned out delicious and elegant! I'm not that secure of a cook either. The slow-cooker recipes are fabulous too.
Beside the recipes, the ideas for new mothers are a great read!

Don't get me wrong...I'd have given this 5 stars had I not owned Karmel's First Foods, but as I flipped through this book I had serious deja vu! Not only were many recipes the same as those in First Foods, but several of the beautiful pictures were of the same items! It may take some time to idenify just how many are essentially the same since some recipes have new names ~ though some are as easy as Jell-o boats (FF) and Gelatin boats (FFM), mini-muffin pizzas, fruit smothies,
Despite the repeats, I am excited about the new book as is my almost-5-year-old! She has looked at the colorful photographs and pointed out several items she "can't wait" to try ~ including many with vegetables she had previously labelled "yucky". If Karmel's innovative presentation takes a few more minutes but can encourage my kids to break out of the hot dog/ mac and cheese routine AND sample new veggies, I'll glady buy her next cookbook too...even if it has a few recycled recipes!

I've made 3 or 4 casserole meals for my small family from this book. These meals are quick to prepare, often utilizing canned vegetables and other canned products, and readily available spices, and pop in and out of the oven in no time. Meals are always scrumptious; even the mashed potatoes and ground beef casserole I made last night using left-over ground beef was a treat. Left-overs generally last for 2 to 3 days in our 2 person family. I will advise that you season according to your personal tastes. Our Latin American palettes prefer a little "spice" added to each dish. Color photos abound in this book and 1-2-3 directions puts the ease in eas(e)y. :)

This is the fourth book in the "Cooking for the Rushed" series by Sandi Richard and I think the best. She is the expert on meal planning. She mentions that the most stressful part of the day is dinner, and I can believe that because so many of us don't start thinking about what's for dinner until 5 minutes till six. But she has developed a system to change that.
The book has 10 weeks of meal plans, each divided into colors. The red and yellow meals are dinners that can be prepared in under 30 minutes. The green and blue meals are dinners that can be prepared in under 60 minutes. The average family spends 38 minutes preparing dinner each night. But at a glance you could easily see which meals you could have enough time to prepare and get out of the house in time.
This cookbook has some very nice pictures (all recipes had a full color picture, what a treat!). There are vegetarian substitution suggestions. The pages are glossy so splatters would clean up somewhat easily. She also gives suggestions on which meals are "having company" type meals, crockpot meals, there are calorie and nutritional information provided, there's an equipment list so you'll know all the pots and pans you need, and there are also food exchanges. All is great information that many many cookbooks don't provide.
Her recipe for Mexican Hamburgers calls for 90% lean ground beef but you could easily substitute turkey or tofu. It was delish; I loved the avocado salsa. There are also make ahead (freezer) suggestions for this recipe for those who like to do weekend cooking.
Most of the recipes call for a full meal suggestion. The red snapper with pineapple salsa, pecan wild rice and asparagus is a complete meal. And it's all ready in under 30 minutes.
All of the recipes use fresh ingredients. I didn't see any packaged foods (bottled BBQ sauce maybe) so her recipes by naturally being healthier and less fat will most certainly cause weight loss. They are not specifically low-fat but that is the usual outcome when you stop eating fast-food and start cooking with fresh, natural ingredients.
There were no unusual combinations, I think most people would have kids who'd very easily try these meals. We had the crispy chicken and the kids just raved. The secret ingredient was crushed crispy rice cereal. The serving suggestions were baby potatoes seasoned with garlic herb seasoning and a side salad. All very doable in the evening. It cooked in the oven so we could do homework in the meantime.
Her main suggestion is to get all your equipment out as soon as you get home, start the water boiling, etc before changing clothes. I hadn't thought of this but I can see where this would be a big motivator to continue cooking once you changed. I've found myself returning from the bedroom and just sighing because I now had to drag out pots and pans and start cooking. While not a big deal in itself, it's easier to jump in the car and go to a restaurant especially when the kids are begging. But after a few of these meals the kids will be begging for more home cooking!
There are grocery lists provided broken down by category. Each week has 5 recipes for the week not 7, I saw in another review that bothered someone. I find it doable because at least one night you want to have pizza and another you're out and about anyway.
She also has spice combinations for those spices you don't want to pay extra for (i.e. pumpkin pie spice). She has all kinds of suggestions and cooking terms that would make this book excellent for a young family getting started.

This is yet another cookbook aiming at the 30 minutes to dinner genre. The cookbook touts meals that are hassle-free, great and nutritious, tried-and-true, perfect results every time...well I can say first hand that is all true.
This cookbook not only has recipes that you pull out of the fridge and cook as soon as you get home but it also has dishes that are started in the slow cooker that morning and then when you get home you have a finished meal. So don't think it's just hurry, hurry, cook, cook as soon as you hit the door.
The first one I tried was actually a slow cooker recipe, Chicken Scarpariello. I started it in the morning and it did take close to 20-30 minutes to assemble because there was some pre-browning of the meat, onions, garlic, etc. Then I put in the slow cooker and left it on low all day. But when I hit the door from work it was oh-la-la, it was delish (in Rachael Ray speak). The aroma was wonderful and we were eating within 15 minutes and then out the door to wrestling. I recommend this recipe.
The next recipe I tried was the Jerk Pork Chop with Grilled Pineapple. The recipe called for using a fresh pineapple but we can't get those in the mid-west in the winter (without paying an arm and leg) so I used canned pineapple rings and the results were the same. I used the Pampered Chef Jerk Seasoning but there is a recipe for making your own blend. So all the recipes can be modified with similar results if you need too. Nevertheless the kids loved it, the recipe could be substituted with ribs, chicken drumettes, etc with outstanding results.
Nutritional information is provided for each recipe so if you need to watch your WW points, salt intake, etc it's all there. There are prep times, cook times, serving size, and total time for each recipe. There are a few pictures and they are good quality.
There is a vegetarian chapter and I made the Florentine Frittata and nobody noticed there was no meat. It was just as good as the other recipes. I have found no "bad" recipes yet.
These are all entrees, there are no sides, no desserts, no fillers so to speak. Many of the recipes are one pot meals (like the Chicken Scarpariello) but many are not like the Jerk Pork Chops. You'd still need to add a side salad, bread, etc to make it a complete meal. I don't think you'd want to serve just pork chops and pineapple...but maybe. There are so side serving suggestions, and there are no recipes for quick sides. I guess you just open a can of corn and heat??
I hope this helps. Overall a great "quick go-to" cookbook and well worth adding to your 30 minutes genre collection. If you have Super Suppers Cookbook or "Super Suppers 2" by Judie Byrd, Saving Dinner: The Menus, Recipes, and Shopping Lists to Bring Your Family Back to the Table by Leanne Ely, or "Betty Crocker's 1-2-3 Dinner" than you'd be OK to skip this one. But if you're starting out this would be a great purchase. Just remembered to suggest Sandi Richard's The Family Dinner Fix: Cooking for the Rushed. It would be a great one as well.

This is an excellent cookbook for creating simple pasta meals that are a little adventurous and very tasty. The author has several sections - vegetarian dishes, seafood dishes, and meat dishes - with enough recipes in each section to make this a very usable book no matter what your eating habits. That is, unless you've gone gluten free. Even then, I suppose you could use this book with non-gluten pastas.
Another thing I like about this book is that the recipe requirements are not out of the ordinary. I tried the pasta alia puttanesca bianca and I had all the ingredients. I also had all the ingredients on hand for several other meals. I think this is a great book for a quick, delicious meal on a busy night or even if you're having company over.

This book is loaded with really tasty and easy dinner ideas. Instead of saying exactly what the recipe calls for it gives you ideas of what to combine based on what you have on hand - no fancy ingredients to shop for!!! Also has really easy measuring (ie: a handful of vegies per person). The recipes are really quick to make and are easy enough for kids to help make supper. This book has taken the stress out of that "just home and have to get supper on the table hour!!!!"

At first pass, I almost overlooked this lovely title BECAUSE of the title. I don't have any children, I don't eat beef and often avoid the heavy and greasy staples associated with men, and my husband is my partner in the kitchen -- not someone I wait on hand and foot. Inside this beautiful book, the reader will not only find a solid collection of easy and delicious recipies, but equal parts useful advice about food, family togetherness, cooking, and auto-biography. Impressive credentials as a Martha Stewart big-wig aside, Lucinda Scala Quinn's food is accessible, familiar and yet inventive, and can be cooked using the budget and pantry of an average American family. As a newlywed and busy college student, this book has been a lifesaver! I bought it on a whim, but this is one time when a cookbook has changed my entire outlook on cooking! I refuse to cook anything that makes me spend time mincing or calls for 1/3 tsp of something they don't have in our small town grocery store. This book has quick, easy meals that are healthy and fulfill my husband's hearty appetite! He and I have loved everything I've made so far! Another bonus: there are not a ton of ingredients for each recipe and everything listed is inexpensive! We are definitely on a budget and we are able to enjoy a nice dinner with these recipes! There is a plastic cover around the outside to make for easy clean-up if something gets spilled on the cover. My book is not spiral bound, but generally stays open while cooking. Also, almost every recipe has a picture which helps me understand what the final product should look like and even offers a variety of sides to think about adding. This is a must-have for anyone like me. Food is important, but with a busy life on a budget, I don't have money or time to bother with multiple ingredients and difficult instructions. I need easy, cheap, quick meals that will keep us healthy and happy! This cookbook helps do exactly that!

This is a wonderful cookbook! My husband just bought this for me and I can't wait to make them all. In addition to recipes, many pages have an area called "Did You Know" (which gives info on Italian cooking or history of the dish), "Helping Hands" (how your kids can help in the cooking process) and a Kitchen Tip.
The recipes are very straight forward and the photographs are beautiful (I find it helpful to see what the dish is supposed to look like). The Nonna's Secrets (which means Grandma's secrets in Italian) chapter gives lots of useful information such as how to get more juice out of an orange (put them in warm water before squeezing) or how to ripen an avocado quickly (store the avocado in a paper bag with an apple).
Finally you get tear-out lists to take to the store so you can plan meals for the entire week. This cookbook/handbook would make a great gift for anyone who enjoys cooking.I highly recommend it!

This cookbook definitely offers meals prepared in under 30 minutes, but at the expense of your wallet. About 85-90% of the recipes include using ready-made, packaged meat and/or pasta. Some included recipes would cost just as much as a restaurant meal. It is a nice cookbook if you keep some of the prepared products on hand for "just in case" you are running out of time and need a quick meal. For someone who already uses a lot of ready-made items, this cookbook would be a wonderful tool to take your usual fare up a notch. I gave it 3 stars for that reason only. Glad this book was in the bargain section for a couple of bucks when I bought it.

I really liked Sandi Richards' first book The Family Dinner Fix: Cooking for the Rushed and just knew that I had to have this one when it came out.
This book has 10 weeks of menus for 5 nights of the week. It only includes 5 evenings of meals because it is expected that one night you will dine out and perhaps another you will eat leftovers or have pizza. The meals are divided into color coded meals of green, blue, red, and yellow. What this symbolizes is the time it takes to prepare each meal so you decide when night you're having which color.
The red and yellow coded meals are designed to be ready in under 30 minutes with the red requiring less cutting and chopping. The green and blue coded meals are designed to have dinner ready in under 60 minutes, it allows for doing something else while dinner is cooking. The green means less cutting and chopping. So while dinner is cooking you could be helping the kids with homework, starting laundry, etc.
Each week has at least one of every color so you mix and match as your evening plans dictate. There are fabulous pictures and nutritional information with each recipe. Food exchanges are also included for those who need that info. Additional serving suggestions are provided to complete the dinner meal such as the addition of rolls, salad, side steamed vegetables, etc. This would be a great gift for someone who is new to cooking and dinner preparation. It really is an uncomplicated approach.
Grocery lists are also included so make sure and check out her website, www.cookingfortherushed.com it's a great supplement to the book. I would also suggest Getting Ya Through the Summer (cooking for the Rushed) if you can still find it.
I set my timer and made the Pecan-Crusted Salmon, sweet potato fries and broccoli per her timeline. This is a yellow coded 25 minute meal so I set the timer and started. It took me 31 minutes from start to finish. I think my delay was in reading and re-reading just to make sure I didn't miss a step. That is just my newness and inexperience with the recipe. I think her timelines are definitely within reason.
Her biggest suggestion is to have a menu prepared for the whole week ahead of time. So as you as you get home you know to start water boiling or turn the oven on, etc. Then you go change clothes while the water is boiling, oven is preheating vs. starting it after you've changed when you're more likely to say "let's just order pizza."
I highly recommend this book for those who need a jumpstart with dinner and getting meals in order. Family meals should be a priority and not an afterthought. Fast food is not a healthy, nutritious meal...this cookbook is. If you like this genre of cookbooks I would suggest The Food Nanny Rescues Dinner: Easy Family Meals for Every Day of the Week as well as The Candy Bar Cookbook.
For the publishers, the front cover of this cookbook does not do Ms. Richards justice. It looks too similar to her first cookbook and when I initially saw it I thought it was her first one, The Family Dinner Fix. This cover should not have included her picture and exact same pose as her first book. Regardless of that this one is a keeper.

Being a woman "of a certain age" and married for 20+ years, I have been cooking for a long time. I admit, I am far from gourmet: I don't specialty shop; I don't watch the TV cooking shows or reality shows starring angry chefs and their desperate-to-please minions; glossy gourmet food and recipe magazines make me nervous.
I do have skills. I have one small shelf of cookbooks in my kitchen. I can cover the basics, having more or less successfully fed and nourished a healthy family of five for some time now. Culled from a 25-year-old, well-worn copy of the cooking classic: BETTY CROCKER'S COOKBOOK (1987), family magazines and, in more recent years, recipe searches on AllRecipes.com for the iPhone and iPad, I have compiled my very own cookbook: a mish-mash of photocopies, hand-written classics and typed recipes, all carefully preserved in plastic page protectors and haphazardly "filed" in a white, plastic-coated (easy wipe!), 3-ring binder.
