don't let the the dearth of pictures deter you--this is a wonderful cookbook, even if you are not totally vegan. Especially good are the Tempeh-Sweetcorn Roast, Aduki Bean Casserole, and Tomato-Olive Spaghetti Sauce. I use this book almost every day. I hardly ever use any other cookbooks and was about to give up on them entirely until I found this one. Most of the recipes have been great and even the "worst" ones were okay. I haven't even tried everything yet because I love what I have eaten so far so much I get a craving for those recipes and make them instead.
The ingredients are almost all inexpensive and easy to find, plus there aren't a whole lot of perishables to purchase and waste. The ingredients include many of the foods that are anticarcinogenic, immune-system building, etc.
This book makes me enjoy being vegan. I feel priveledged to be eating this way and feel sorry for people that think that food has to be a dead animal and unhealthy to taste great.
I actually cook from this book almost every day (as long as I have some groceries in the house)after working a long day!

This cookbook is not only full of fabulous bean recipes, it is a fun read as well! I love Suzanne's suggestions, helpful hints, and the extras about friends and family who lovingly inspired her along the way.
As a bean LOVER, I am delighted by all the extremely creative recipes - and I'm anxious to try out the desserts! One of my favorite things about this cookbook is the set-up. Instead of the traditional cookbook method of chapters grouped into "appetizers", "entrees", "desserts", etc. - each chapter in this book is dedicated to ONE bean variety. So for example, with black beans - you will find all the appetizers, entrees, desserts, etc. IN the black bean chapter! I thought this was great - no digging through the "desserts" chapter to find where the black bean desserts are!
I highly recommend this cookbook - there is literally something for everyone. It makes healthy eating FUN - thank you Suzanne!

Rita Romano talks intelligently and to the point on how to eat healthy. For a reader that doesn't know the first thing about eating raw foods, how to start, what's good for them and what's bad, this book is exceptional. It is well laid out and is chock full of information. My profuse thanks to Rita - I had always wished, reading book after book, that someone would write a no-nonsense practical book that explained things start to finish in an informative and easy-to-understand manner. "Dining in the Raw" does. There really is not a wasted page in the book - anyone buying this book gets their money's worth.

I opened the pages of this title expecting to read an extraordinary cookbook, but I found much more: a handbook for conscious living and for celebrating life in the food energies that we take in as nourishment for body and soul.

Yes, this book includes a Raw Food Brownie recipe. The texture is variable, depending on your kitchen equipment, and the taste isn't precisely right, but its DARN good. To be truthful, i bought this book for the brownie recipe.
This book contains basic information you will need to start your raw food life, including the basics of sprouting, soaking, making nut milks, and so on. It includes most of the information from her other book "Eating in the Raw" in a condensed form. It also has far more recipes, and fewer testimonials and "how i got here" stories.
some of her recipes call for a food dehydrator, or serious prep time (a common problem with the higher end Raw food recipes) but there are many items in this book that can be made with no equipment of note, or a blender alone.
The Juices and smoothies section is excellent, if basic for someone who is experienced in Raw Food living. The recipes are clear and do not assume a great deal of expert knowledge. Most of the main course type recipes are for items that replicate cooked foods, like mock lasagna, and this is true of her desert recipes as well.
The book has an extraordinarily high number of deserts and mock "cooked" meals that are still within the capabilities of a typical raw food beginner, and may be especially helpful to someone trying to make dishes that won't scare off the more conventional eaters in a family.

I pre-ordered this book before it came out because I loved the author's previous book, The Mediterranean Vegan Kitchen. When it arrived I started using it immediately and have not been disappointed. I hope she goes on to write a Vegan Francaise cookbook and many more.
The recipes are relatively simple and straightforward. I am thrilled that they avoid vegan ingredients that are not indigenous to the region - there are no calls for tofu, fake meat or tempeh, etc.
Where an Italian recipe traditionally calls for cheese or eggs, the author finds a vegan version or invents one, staying within the norms of the cuisine. Most recipes are less than a page. There are no pictures. Every recipe I have tried has been delicious and even my husband (who thinks all Italian food should be smothered in cheese) has liked these dishes.
Anyone who like Italian food will appreciate this book.

This is one of the top five cookbooks I plan on rescuing in case of house fire. Just kidding, but I would immediately go out and get it again! Buy this book -- it's worth it just for the mac and cheeze, orange chick'n, and buffalo bites recipes. ABSOLUTELY AMAZING. Did I mention the mac and cheeze? It's not a nutritional yeast sauce! It's incredible!
This book has a good range of simple idea-type recipes -- as in, recipes you can really put together quickly and throw in your own substitutions -- plus more still-easy-but-complex-in-flavor recipes for the scratch cook. Oh and I can't say enough about the barbecue sauce, too. I'm picky picky picky about BBQ sauce and the one in this book plus the one in Veganomicon are to live for.
This is my first attempt to start reviewing some of the zillions of cookbooks I own. Happy cooking!

As an adult I have been delivered from the Midwestern home of my childhood (meat and potatoes, cream of mushroom soup casseroles, ice cream every night before bed) to the beautiful land of Oregon where outdoor markets and co-op shopping are plentiful. Over the past ten years I have been exploring vegetarian options and a healthier lifestyle but it can be difficult to get beyond some of the complex recipes, expensive ingredients or bizarre taste combinations that seem to frequent vegetarian cookbooks and co-op shelves.
This wonderful book is geared to suit children, who can be notoriously picky eaters, but it also works well on an adult level. It is a great introduction to quick, simple vegetarian meals that introduce a few basic items without overwhelming the taste buds or the wallet. For both adults and children it is possible to move into a healthier lifestyle gradually, one recipe at a time, one meal per week...when we can sit down as a family and each find something new that we like on our plates then I think we become much more open to making healthy choices habitual.

I love this book! It is great for exactly what I wanted to do...learn how to cook some fun, vegetarian dishes that even I wouldn't goof up!
Every dish that I've tried has been a success...that's saying a lot since my mother's only cooking lesson was 'how to heat a can of corn.'
One thing to mention is that this book is meant to build on Madison's other cookbooks. It is not meant to be a complete guide for basic family meal planning, just simple yet elegant main dish ideas suitable for casual entertaining.
With our only child in junior high now, and my husband doing volunteer work, we are up to having about 1/3 the time that a serious cook does for making dinner, and these meals fit right in.
Most of the recipes I've used take about 25-40 minutes to prepare, mostly because I'm really slow at cutting vegetables, finding where I set the teaspoon, etc.
I guess you can't see the contents or preface above, so here's the layout of the chapters:
1. Savory Pies and Gratins
2. Vegetable Stews and Braises
3. Pasta with Vegetables
4. Crepes and Fritters
5. Mostly Tofu and some Tempeh
6. Eggs for Supper
7. Hearty Cool Weather Suppers
8. Light Meals for Warm Weather
9. Supper Sandwiches
10. Basics (eg, guacamole, peanut sauce, tapenade, warm goat cheese sauce)
What I really like about this book is she explains things simply enough for a beginner, and uses mostly ingredients that I've heard of, but always takes things a step beyond what I'm familiar with, so I'm learning something.
So if you are a food snob, this book is probably not pretentious enough for you. If you have a large family and don't feel like getting creative with dinner at the end of the day, and just want something you can throw together fast that will feed several and probably be edible, this book is not for you. But for a family of 3-4, or a couple who likes to have something special a few nights a week, this is just perfect.
My favorite recipe is one for a couple of eggs cooked over mushrooms sauted in wine and bread crumbs...it's something I can throw together for myself in just a few minutes when I get home late, and I don't have to measure anything because you just put in as much of each ingredient as you like...and it tastes so good!
About the wine recommendations--Not only is it good for your heart, but new research shows drinking red wine on a regular basis may help prevent or delay the onset of alzheimer's. Since both health problems run in my husband's family, the suggested wines have been a fun way to incorperate a very healthy habit.

If you are looking for a complete vegan cookbook to add to your library, or if you are interested in learning about veganism, I highly recommend this book. You don't have to know a thing about veganism to jump in and cook scrumptious meals. This book provides an explanation of terminology as well as an essential ingredients list and shopping guide. As someone who loves to eat, but hates to spend forever preparing meals, I was especially impressed with the availability of the ingredients and the simple directions. Although I've been vegan for many years, I found new delicious recipes such as Cream of Broccoli Soup w/Cashews, spicy pasta dishes like Pasta w/Artichoke Hearts (cooked with dried and fresh tomatoes), as well as yummy desserts, appetizers, and dips. This book is a must for all kitchens, and I'll be giving it as a gift to vegan and nonvegan friends.

I was looking for a good book to use with my slow cooker and came across this - while its not intended for the slow cooker you can certainly do a lot of the recipes in it. That aside, it's definitely all in one pot which means - easy to make and clean up which is a big bonus on a busy day! No pictures to drool over but the titles of the recipes are quite inviting. I've only made a few of the stews so far but each has been good. The table of contents includes the following:
- Intro: Eating Vegetarian
- The vegetarian Soup Pot
- Vegetarian Skillet Dinners
- The Vegetarian Stew pot
- Vegetarian pasta
- Vegetables in the Wok
- From a Vegetarian Oven
- From the Vegetarian Saucepan and Steamer
Its not a vegan cookbook - eggs, sour cream, milk, cheese are mentioned in various recipes - I just substitite as needed and it seems to work out.
In terms of variety - there are lots of differnet types of flavors and cultures represented - middle eastern indian, southern comfort foods, greek, italian etc. Lots of variety.

As an old Chicago Diner fan, I could not wait for this book to come out. Since I purchased it, have been using it for so many dishes at home.. Everything is so healthy and easy to make. Try the tofu cheesecake, cream soups (made with soy milk), Ex-Benedict, Tofu roll, Chocolate mousse. Even my kids approve of the dishes. They still have not figured out that they are eating tofu. Jo Kaucher translated most of the comfort foods you remember from your childhood into healthy vegan recipes -- that taste great! Thank you...

This book provides a wide array of completely vegan sauces, sides, entrees, and desserts that are all extremely low in fat and all very easy and quick to prepare. Almost every one of the recipes that I've tried were excellent(and I've made almost all of them. Of special note are the baked goods and desserts that are vegan and fat-free (or very low fat) yet resemble their dairy and egg laden counterparts. Favorites include eggless French Toast, Non dairy sour cream, tofu loaf (different from any 'meatloaf' tofu recipe you've tried), Drop biscuits, vanilla cake/muffins, and cheezecake.

I don't have enough space in this forum to express my total appreciation for this book. I've had it for over a year and I've barely used a fraction of it's valuable ideas. The ones I have used, I've used over and over again! I'm sitting here right now thinking of making some bread. I can either grind the grain by hand or use the recomended grinder I discovered from the book! I'm pretty much all set! A Must Read!

Hooray! This is the cookbook for which I have been waiting. In fact, if you are vegetarian or vegan, you have very likely been waiting for it, too. It truly has wide appeal. Whether you are a veggie teen, an active and over-committed adult, or a senior citizen wanting to keep it simple (as in easy), you will enjoy and value Nava Atlas' book as much as I do. There is so much I love about it, and only two things I would change; but they are teensy-weensy criticisms. First, about the recipes: true to her word, Ms. Atlas has somehow managed to create 250 recipes, each with five or less ingredients. You will find familiar stand-bys, as well as new and imaginative dishes. Looking for a hummus recipe? It's in there. How about veggie pizza? It's in there, too (twelve pages of pizza recipes-delicioso!) Do you enjoy a comforting, nourishing soup? Yep; you will find that, too, in "Chapter 1: Simplicity in a Soup Pot." What about tofu? I have been eating tofu regularly for nearly ten years now. You can imagine that my favorite tofu recipes no longer create much excitement at the dining table. Therefore, I am always on the lookout for an addition to my tofu repertoire. Was I ever excited to find an entire chapter ("Chapter 5: Essential Soy") devoted solely to tofu recipes! That's where I headed first.
There is so much more to The Vegetarian 5-Ingredient Gourmet than recipes. If your mantra is, "I don't have [pick one or more] a) the time, b) the inclination, c) the know-how to successfully prepare a vegetarian or vegan meal," have no fear. Ms. Atlas has done all the thinking and the work (except the cooking, of course), including a complete shopping list for stocking your cupboards, menu suggestions for each and every recipe, a menu-planning guide, and nutritional statistics. There are even shopping list and planning forms that you may reproduce over and over again. My absolutely favorite thing about this book is that every chapter-indeed, nearly every page-includes interesting and fascinating information about the various recipe ingredients. Ms. Atlas has also provided numerous helpful hints regarding preparation. Remember the two teensy-weensy criticisms I had about The Vegetarian 5-Ingredient Gourmet? One is that it has no color inside. I think it deserves more pizzazz than shades of gray. The other is that it is not in hardcover, and I fear this treasure of a cookbook will wear out long before I am ready. ...

As soon as I heard the title, The 30 Minute Vegan, I fell in love with this book. As with any great page-turner, I settled into a comfy chair and read through it from cover to cover. Every recipe beckoned to me, and just reading through the ingredients, I knew that these were going to be some very impressive dishes. Discovering a book filled with 175 mouth-watering recipes that could be made in 30 minutes or less was like a dream come true. If I could prepare great-tasting, satisfying, hearty vegan meals in much less time than I was accustomed to spending in the kitchen, then The 30 Minute Vegan would be a godsend.
But where to begin? Because I happened to have some nice, juicy ripe mangos on hand, I started with the Live Mango Gazpacho Soup. While most gourmet raw food dishes are time consuming (all that soaking, chopping, dehydrating, etc.), and high in fat from nuts, seeds, and avocado, this delightful little soup turned out to be a wonderful surprise! It's actually simple to prepare and made for a sensational low-fat summertime dish. As I have a garden full of mint, I substituted it for the cilantro called for in the recipe, and it blended quite nicely with the lime juice and mangoes. That's one of the things I love about The 30 Minute Vegan: Unlike most other cookbooks, the way the recipes are presented, you are actually encouraged and inspired to add your own culinary creativity. I love that feeling of freedom. I wasn't afraid to experiment on the first go-round with any recipe. The authors made me feel like I couldn't mess it up.
The Monk Bowl's, "Zen simplicity," as it is described in the book, is also co-author Mark Reinfeld's favorite meal to prepare. So I couldn't resist trying such an enlightened and inspired recipe. It's made with quinoa, which is noted for containing more high-quality protein than any other grain. I love it's lighter-than-brown-rice consistency, although this dish would be wonderful with any kind of rice, too. I chose to use roasted tempeh instead of tofu, (one of the suggested variations on this recipe), and added sliced red bell pepper and edamame to the mix of broccoli, carrots, and cauliflower. Served with nutritional yeast, soy sauce, flax seed oil, and a sprinkling of toasted sesame seeds, the lightly-steamed veggies and fluffy quinoa made for a hearty and satisfying meal. I think that the next time I make this dish, I'll try it with the peanut sauce suggested as another variation of this recipe.
I was thrilled to see that a simplified version of the prize-winning recipe from last year's Most Remarkable Vegan Recipe Contest was thoughtfully included in The 30 Minute Vegan. Live Un-Stir-Fry with Cauliflower Rice was as fun to prepare as it was vibrantly eye-appealing and palate-pleasing. The cauliflower "rice" really fooled my taste buds, and the spicy vegetable dressing had just the right balance of sweetness and piquancy.
Extremely helpful sidebars are peppered throughout the book: "Quicker and Easier," "Tips and Tricks," "Superfoods for Health," and "If You Have More Time" enhance the value of this book a thousandfold. As do the opening chapters, "Getting Started" and "Preparation Basics," which includes grain and dried bean cooking charts. It's wonderfully time-saving to have all of this information in one place.
Since I feel the need to get my hands on a copy of every vegan cookbook that comes along, I have a stack of them collecting dust on my bookshelf. But like the authors' earlier books, Vegan World Fusion Cuisine and The Complete Idiot's Guide to Eating Raw, The 30 Minute Vegan has found a permanent home in my kitchen, where its pages will quickly become worn, torn, and stained. And I haven't even begun to scratch the surface of this book. Can you say Chocolate Ganache Pie?
