This cookbook is not only full of fabulous bean recipes, it is a fun read as well! I love Suzanne's suggestions, helpful hints, and the extras about friends and family who lovingly inspired her along the way.
As a bean LOVER, I am delighted by all the extremely creative recipes - and I'm anxious to try out the desserts! One of my favorite things about this cookbook is the set-up. Instead of the traditional cookbook method of chapters grouped into "appetizers", "entrees", "desserts", etc. - each chapter in this book is dedicated to ONE bean variety. So for example, with black beans - you will find all the appetizers, entrees, desserts, etc. IN the black bean chapter! I thought this was great - no digging through the "desserts" chapter to find where the black bean desserts are!
I highly recommend this cookbook - there is literally something for everyone. It makes healthy eating FUN - thank you Suzanne!

As I am vegetarian and my husband an omnivore, the title of Manning's book hooked me like a noose. Who wouldn't want to quickly (and with excellent results, no less) adapt a meal for every eater at the table? I rushed to order a copy of The Adaptable Feast: Satisfying Meals for the Vegetarians, Vegans, and Omnivores at Your Table by Ivy Manning, knowing full well it couldn't be done. But, hey, I wished to be proven wrong.
Maybe a less confidant cook would need to be told how to make a vegetarian meal and then add roasted chicken as a finishing touch. I certainly do not. So let's just say I was disappointed with the recipes at first review. What won me over is how Manning balances protein and calories for both the meat and veg dishes in the recipe. Rather than re-imagining the entire dish and ending up in unfamiliar territory, she substitutes veg ingredients, adjusts the recipe, and continues to make the dish with flavors you'll recognize. Easy peasy, or at least it seems that way.
Pad thai to potpie, the major plus to this book is the world cuisine it offers up to both vegetarians and meat eaters. With a slew of fragrant spices, the Vegetable and Chicken Korma with Cashews smells and tastes authentic. A true weekend recipe with multiple steps, Moussaka with Lamb or French Lentils is a masterpiece of slow cooking that you'll savor, even if -- like me -- you're too tired to make it ever again.
Particularly exciting to me are recipes that don't include any variations at all, like the ingenius Indian Spaghetti Squash Cakes with Yogurt Raita, or a one-dish dinner of Quinoa-Stuffed Heirloom Tomatoes with Romesco Sauce, or the doubly nutty Sweet Potato Gnocchi with Sage and Walnut Brown Butter. I'm being generous if I say that a quarter of the recipes can easily be made vegan, though Manning's single dessert is chocolate vegan cake with vanilla frosting in a lilting recipe that sounds like a gathering dream. Yes, there's a photo of that one, folks.
Some of the recipes are a bit long and definitely not for beginning cooks, but overall Manning offers a solid selection of recipes to appease a variety of palates.

My mother in-law bought me this book shortly after I married her son. I think she was a little worried that he wouldn't eat well because he married a vegetarian. Our first year of marriage I used only this cookbook and a few recipes my mom had given me. I can't tell you how exciting it was to sit down, read through a section of the book, write a grocery list for the items I would need, write out a dinner menu for the whole week and then call my friends to tell them what I was fixing on each night and ask them what sounded good to them so they could join us for dinner. I did this for several months until my evenings were filled with other activities. (Eating was definitely an activity when it came to using this book.) I have enjoyed every recipe I have used from this book. And they're so easy!! Here are a few of my recommendations (I don't have page numbers in front of me): The Barbecue Red Beans, Corn and Rice; Manicotti; Fajitas; Falafel; Hummus; Black Bean Hummus; and so many more. My only problem with some of the recipes is that I'm not a big salt eater and so I changed a few of the measurements on some recipes. And also, because she uses a lot of cheese (which is my favorite food) I gained a lot of weight that year. I do love the fact that she doesn't suggest using lowfat or non-fat foods to make the recipes but use caution. This is a "must have" cookbook if you love eating really good food!!

I subscribe to Vegetarian Times and really like the recipes. However, just like any kind of cooking, VT's dishes CAN be complex and time-consuming. The fact that they're vegetarian recipes doesn't automatically mean they're easy to prepare.
Here comes this book to show just how simple vegetarian cooking can be.
Many of the recipes are so short and quick to prepare that you'll be stunned. They're also remarkably "simple" in the sense that they're not loaded with a gazillion different ingredients. The whole wheat waffles, for example, have a grand total of six ingredients, which is just fine by me, especially since I get a little antsy whenever I have to go through every cabinet in my house to find all the stuff I need to make most things "from scratch."
One of the challenges cooks face in a household that is "blended" (that is, composed of both vegetarian and non-vegetarian members) is coming up with dishes that appeal to everyone, taste great, and don't break the bank. These fit the bill.
It's not all beans and tofu, either. Wonderful uses for different veggies make it possible to use leftovers and maximize our food dollars.
I particularly like the soups and stews, and I'm glad they include simple drinks like aguas frescas (fresh waters made with fruit).
I think you'll like this one.
The only reason I don't give it five stars is that it is very short on pictures. I really love to see how a dish should look after it's done, and this book has only a few pics to accomplish that goal.
If you are looking for a book that contains great vegetarian recipes for really elaborate meals, please search further. But if you want quick, tasty, relatively-inexpensive dishes, this is a good choice!

This cookbook is a real gem. The recipes are quite unusual but they are also simple and very clearly presented. I have tried quite a few and they have been uniformly delicious. As someone on a restricted diet which can get quite boring, I have been particularly pleased to find so many interesting wheat and dairy-free recipes.
Wonderful as the recipes are, the photos and stories throughout the book are what make it a real treasure. The photos are instructive, enticing and artful. And the stories from cook-apprentices at the Zen Mountain Center are touching and funny. The book is so lovingly and artistically put together that it is a pleasure to flip through, and it makes a great gift.

This is one of the best vegetarian cookbook ever. Most of the recipes are simple and fast to make, and all of them delicious.
It classified every meal into vegan, lacto-ovo, lacto, and ovo; and each recipe has the nutrionational guide too.
In the last edition they added the Smart Carbs chapter, for vegeterians that are also interested in wiselly choosing their carbohydrates.
I totally recommend this book for everyone that want to eat in a healthier way.

I love this book! It is great for exactly what I wanted to do...learn how to cook some fun, vegetarian dishes that even I wouldn't goof up!
Every dish that I've tried has been a success...that's saying a lot since my mother's only cooking lesson was 'how to heat a can of corn.'
One thing to mention is that this book is meant to build on Madison's other cookbooks. It is not meant to be a complete guide for basic family meal planning, just simple yet elegant main dish ideas suitable for casual entertaining.
With our only child in junior high now, and my husband doing volunteer work, we are up to having about 1/3 the time that a serious cook does for making dinner, and these meals fit right in.
Most of the recipes I've used take about 25-40 minutes to prepare, mostly because I'm really slow at cutting vegetables, finding where I set the teaspoon, etc.
I guess you can't see the contents or preface above, so here's the layout of the chapters:
1. Savory Pies and Gratins
2. Vegetable Stews and Braises
3. Pasta with Vegetables
4. Crepes and Fritters
5. Mostly Tofu and some Tempeh
6. Eggs for Supper
7. Hearty Cool Weather Suppers
8. Light Meals for Warm Weather
9. Supper Sandwiches
10. Basics (eg, guacamole, peanut sauce, tapenade, warm goat cheese sauce)
What I really like about this book is she explains things simply enough for a beginner, and uses mostly ingredients that I've heard of, but always takes things a step beyond what I'm familiar with, so I'm learning something.
So if you are a food snob, this book is probably not pretentious enough for you. If you have a large family and don't feel like getting creative with dinner at the end of the day, and just want something you can throw together fast that will feed several and probably be edible, this book is not for you. But for a family of 3-4, or a couple who likes to have something special a few nights a week, this is just perfect.
My favorite recipe is one for a couple of eggs cooked over mushrooms sauted in wine and bread crumbs...it's something I can throw together for myself in just a few minutes when I get home late, and I don't have to measure anything because you just put in as much of each ingredient as you like...and it tastes so good!
About the wine recommendations--Not only is it good for your heart, but new research shows drinking red wine on a regular basis may help prevent or delay the onset of alzheimer's. Since both health problems run in my husband's family, the suggested wines have been a fun way to incorperate a very healthy habit.

I simply love this cookbook. As an occasional vegetarian, it's a thrill to find a source for elegant, delicious food. Thomas' recipes deliver all that she promises in her nicely written text, and everything I have cooked from this book has been luscious, from fresh tomato risotto to roasted winter vegetables. It's easy to forget that's there no meat in menus so beguiling and satisfying. I also like Thomas' emphasis on seasonal fresh ingredients, and the balance she strikes by presenting recipes you can do on a weeknight without compromising on quality. Finally, I was pleased by her decision to organize the book around menus. Although you don't have to cook the courses as she suggests them, I have tried it and found that the dishes blend beautifully, and that they don't all demand attention or the same piece of kitchen gear at the same time--one person working alone in the kitchen can reasonably produce the full menu without too much angst. A gem for cooks and eaters of all persuasions.

If you are looking for a complete vegan cookbook to add to your library, or if you are interested in learning about veganism, I highly recommend this book. You don't have to know a thing about veganism to jump in and cook scrumptious meals. This book provides an explanation of terminology as well as an essential ingredients list and shopping guide. As someone who loves to eat, but hates to spend forever preparing meals, I was especially impressed with the availability of the ingredients and the simple directions. Although I've been vegan for many years, I found new delicious recipes such as Cream of Broccoli Soup w/Cashews, spicy pasta dishes like Pasta w/Artichoke Hearts (cooked with dried and fresh tomatoes), as well as yummy desserts, appetizers, and dips. This book is a must for all kitchens, and I'll be giving it as a gift to vegan and nonvegan friends.

I was looking for a good book to use with my slow cooker and came across this - while its not intended for the slow cooker you can certainly do a lot of the recipes in it. That aside, it's definitely all in one pot which means - easy to make and clean up which is a big bonus on a busy day! No pictures to drool over but the titles of the recipes are quite inviting. I've only made a few of the stews so far but each has been good. The table of contents includes the following:
- Intro: Eating Vegetarian
- The vegetarian Soup Pot
- Vegetarian Skillet Dinners
- The Vegetarian Stew pot
- Vegetarian pasta
- Vegetables in the Wok
- From a Vegetarian Oven
- From the Vegetarian Saucepan and Steamer
Its not a vegan cookbook - eggs, sour cream, milk, cheese are mentioned in various recipes - I just substitite as needed and it seems to work out.
In terms of variety - there are lots of differnet types of flavors and cultures represented - middle eastern indian, southern comfort foods, greek, italian etc. Lots of variety.

As an old Chicago Diner fan, I could not wait for this book to come out. Since I purchased it, have been using it for so many dishes at home.. Everything is so healthy and easy to make. Try the tofu cheesecake, cream soups (made with soy milk), Ex-Benedict, Tofu roll, Chocolate mousse. Even my kids approve of the dishes. They still have not figured out that they are eating tofu. Jo Kaucher translated most of the comfort foods you remember from your childhood into healthy vegan recipes -- that taste great! Thank you...

This book presents itself in the introduction not as a cookbook for a vegetarian diet, but a guide for people who are trying to eat more meatless dishes. That seems about right.
There are some good recipes to be found - mainly in the Soups/Stews and Quick Dinners sections. There are lots of pastas and frittatas (plenty of eggs and milk make this book very ovo-lactovegetarian) and a whole section for Main Dish Salads.

Hooray! This is the cookbook for which I have been waiting. In fact, if you are vegetarian or vegan, you have very likely been waiting for it, too. It truly has wide appeal. Whether you are a veggie teen, an active and over-committed adult, or a senior citizen wanting to keep it simple (as in easy), you will enjoy and value Nava Atlas' book as much as I do. There is so much I love about it, and only two things I would change; but they are teensy-weensy criticisms. First, about the recipes: true to her word, Ms. Atlas has somehow managed to create 250 recipes, each with five or less ingredients. You will find familiar stand-bys, as well as new and imaginative dishes. Looking for a hummus recipe? It's in there. How about veggie pizza? It's in there, too (twelve pages of pizza recipes-delicioso!) Do you enjoy a comforting, nourishing soup? Yep; you will find that, too, in "Chapter 1: Simplicity in a Soup Pot." What about tofu? I have been eating tofu regularly for nearly ten years now. You can imagine that my favorite tofu recipes no longer create much excitement at the dining table. Therefore, I am always on the lookout for an addition to my tofu repertoire. Was I ever excited to find an entire chapter ("Chapter 5: Essential Soy") devoted solely to tofu recipes! That's where I headed first.
There is so much more to The Vegetarian 5-Ingredient Gourmet than recipes. If your mantra is, "I don't have [pick one or more] a) the time, b) the inclination, c) the know-how to successfully prepare a vegetarian or vegan meal," have no fear. Ms. Atlas has done all the thinking and the work (except the cooking, of course), including a complete shopping list for stocking your cupboards, menu suggestions for each and every recipe, a menu-planning guide, and nutritional statistics. There are even shopping list and planning forms that you may reproduce over and over again. My absolutely favorite thing about this book is that every chapter-indeed, nearly every page-includes interesting and fascinating information about the various recipe ingredients. Ms. Atlas has also provided numerous helpful hints regarding preparation. Remember the two teensy-weensy criticisms I had about The Vegetarian 5-Ingredient Gourmet? One is that it has no color inside. I think it deserves more pizzazz than shades of gray. The other is that it is not in hardcover, and I fear this treasure of a cookbook will wear out long before I am ready. ...

I received this book as a gift and immediately put it to use for father's day. I made the cold avocado w/ lime and jalapeño soup to start and seared tofu w/ black beans & mango salsa as the main dish. They were really both fantastic, and even my extremely carnivorous father was pleased! The meals are very quick and yet are slick and sophisticated. The book itself is gorgeous, and Peter Berley did a very interesting thing with the organization, where it is organized seasonally into menus. Whats so nice about this is that it makes making an entire meal even easier because you are given the ingredient list for everything (in addition to individual recipes), and a "game plan" for what to do and in what order. Fabulous book!

My S/O and I took our first serious back-country trip in more than 15 years last week. We relied completely on this book for meal planning and food preparation. We were not disappointed. The recipes are all written in clear language, and are easy to follow. Packable trail instructions are available on-line, which helps with cooking in remote campsites. Of course, we could not try every single recipe -- but here are some of the best ones we tried. We had Olympus Oatmeal for breakfast every day. The Brunswick Stew was excellent, although it took a long time and lots of fuel to rehydrate the dried beans. The Vegan Super Hero Burritos were our favorite. The Whole-Food Granola Bars and Horse Thief GORP (we used unsweetened chocolate chips instead of carob chips) saw us through some long days of paddling and hiking. Our favorite snacks were the Energy Balls. We fought over the last one of those! I would warn others that many of the recipes call for prepackaged foods, such as Zatarain's Red Beans and Rice. People with specific health concerns should check the contents of these items before they use them. Fortunately, Zatarain's makes a low-sodium version of Red Beans and Rice, which we used. Otherwise, this is an excellent book. You can truly trust the recipes. I recommend it highly.

If so then this is for you. I looked over this in the bookstore and the things that stood out to me were several pages on how to make a peanut butter and banana sandwich, how to make a vegan grilled cheese, and how to make "poor folks" cinnamon rolls (answer: white bread with margarine sugar and cinnamon). No thanks. other things in the cookbook may be more complicated (and...tastier?) but as a college student with no kitchen and only a blender to my name, I can be more creative and healthy than this on my own. also, faux meats and cheese are *expensive* for a college budget. (And get quickly lost in the dorm fridge)... better to spend on nutritional yeast which will perk up popcorn, pasta, and soups. Then again for a first-time vegan this is possibly adequate and I could be a food snob. In short, vegan food snobs, this is not the book for you. :)

This is an excellent cookbook for fast, low-fat vegetarian recipes. All of the recipes contain clear instructions and nutritional information per serving. Per serving, no recipe in the book is more than 10 grams of fat. Some of the recipes we have tried are: Quick Bean-and-Rice Burritos, Southwestern Vegetable Burritos, Fresh Noodles Lo Mein, Chinese Vegetables in Peanut Sauce, Sloppy Joes, Smoky White Bean Soup, Caramelized Onion and Fresh Vegetable Pizza, and Sesame Broccoli. All have been delicious. If you are looking for a quick, delicious, and basic vegetarian cookbook this book is for you. I would also recommend the other books in the Vegetarian Times Low-Fat & Fast series as well as 1001 Low-Fat Recipes by Sue Spitler. You won't be disappointed.
