I am completely baffled by this book and the reviews it has received! After only a few pages I was aghast and realized I had thrown my money away.
I am not a medical professional or scientist but all of my own personal research into diabetes and related blood disorders strongly recommend avoiding refined carbohydrates. This book is full of recipes using highly refined carbohydrates: white sugar and white flour.
I also found recipes containing an uncomfortably high percentage of calories from fat. I expected recipes emphasizing whole, low glycemic foods prepared in as close to their natural state as possible - foods that had as much of their beneficial properties (such as nutrients and fiber) intact. I was extremely disappointed by what this book had to offer and am sorry I bought it.

Well, low carb has been all the rage for sometime now although the fad seems to be slowing down somewhat. But not before TV's spunkiest cook can put her stamp on low carb as Rachael Ray does in her latest book. At 256 pages this is Rachael's largest book yet. I've never quite been able to get meals done in 30 minutes. i guess it probably helps having good editors and a staff but even at 45 minutes or so I've enjoyed every one of Rachael's books. It's good food where taste is first, not fancy presntation and ingredients that have you haunting exotic food stores to find.
The recipes here are not all that low-carb so don't be put off by thinking it's a diet cook book. It's just another great one from Rachael where carbs are used in moderation, but not at the sacrifice of taste. Call them good-sense carb recipes as opposed to low-carb. There's plenty of bread and pasta to be found inside. With all her books the emphasis is on good food and good food done fast and this one, like the previous ones, is right on the mark. Wonderful Italian and Mexican dishes, burgers, even desserts. And it all comes to you in Rachael's endearing, homey way of writing that comes across so well on TV. With her new publisher now being a part of Random House, the book is much more well-presented than her previous ones. Bolder colors that stand out and just plain look better.

Hats off to Doris Cross! She's produced yet another spectacular cookbook! The recipes in this book are absolutely delicious, easy to prepare, and don't require bizarre ingredients. The taste is sensational; you think you're eating high-fat dishes when you aren't! The dishes are simple enough for everyday fare, yet elegant enough for a dinner party. Of the many cookbooks I've purchased since being diagnosed with diabetes, the ones by Doris Cross are far and away my favorites!!

I am not a fan of very high-protein diets, but this book is great. The cover says the recipes are quick, easy, and delicious. They really are! They are inventive, use generally available ingredients, and draw from a range of cuisines. I am an attorney who commutes over 2 hours a day, so I am tired when I get home and I just want to eat. As long as I have the meat called for in the receipe thawed and ready to go, I am eating a great-tasting dinner in 30 minutes or less. Add a salad and a side vegetable and you are all set.
Sometimes the fat content is a little high, but you can generally work around that. Also, the dessert recipes rely on aspartame, which I don't consume now that Splenda is available in the U.S., but you can make substitutions. Very minor problems, in my book.
Highly recommended for anyone who eats meat and wants a quick, easy, and interesting dinner.

I was so excited to see that Dana Carpender was coming out with a 15 minute recipe book. I have the 500 low carb recipes book and am tremendously pleased with it, but this new book is so awesome that although I have used my 500 recipes book religiously for months, it has sat on the shelf for the last week. I have made a different recipe every night this week using this 15 minute recipe book and am enthralled. I've made Sour Cream Ham Supper (my husband loved this), Spanish Rice (scrumptuous, I think I found my new favorite), Beef and Artichoke Skillet (fabulous),Ham and Beans Skillet (so easy, and absolutely delicious), and tomorrow I'm making Pepperoncini Beef; I can't wait. I've never enjoyed cooking so much. All the recipes are so fast and easy. So far, they've all been extremely tasty, too. Dana, keep up the good work.

I read the book entirely in one sitting, the very night I bought it. Then I studied it at length many times, highlighting, making notes in the margins. As a registered nurse, I learned a lot from the references to their research, and their detailed explanation of hyperinsulinemia. They have over 100 references, and 10 years or more in research of this disorder. It was as though a veil had been lifted and I suddenly understood that my condition is physiological, NOT psychological! I have found a new beginning. I know many doctors who recommend this diet for weight loss, depression, high blood pressure, pre-diabetic conditions, high cholesterol. I cannot diagnose myself, but I know it is working for me. I have been on the diet for 6 months and have lost 62 lbs! I don't weigh and measure, count calories, or deprive myself of any of my favorite foods. I feel better, no cravings, and I have more energy than ever! and above all, I am only 18 lbs away from my goal...6 months ago I would NEVER have thought it possible. I followed Dr. Jakubowicz's Big Breakfast diet before my wedding and was thrilled with the results! I now always eat a big breakfast, and I especially love the delicious, healthy smoothie as part of my breakfast. My husband loves them, too.
The most amazing thing for me about this diet is that I used to always crave something sweet in the afternoon or at night, and now I don't.
I also love going to bed not feeling stuffed, and waking up feeling light. It makes it makes it easier to wake up in the mornings because I'm looking forward to breakfast.
I highly recommend this book!

I'm a busy working mom and being able to prepare a nutrient-rich meal -- that my family will actually eat -- in under 30 minutes is fantastic. The turkey and white bean chili (page 196)is their favorite so far. My husband, my teenager and I, all watch our weight and this cookbook is fast becoming our favorite tool in helping us add whole grains, lean sources of protein, and more vegetables to our meal plans. The Pork Fajitas (page 210) and the Rosemary Pork Medallions with Chunky Applesauce (page 211) or the South Beach Macaroni and Cheese (page 249) are perfect comfort food for this cooler weather. Dana Carpender has made a serious study of adapting classic recipes from around the world to work with modern low carb diets. In this latest offering, 200 Low-Carb Slow Cooker Recipes, she proves once again that you don't need refined grains and sugars to enjoy healthful, satisfying food - no matter your culinary traditions or meat of preference. The key is quality ingredients, simply prepared.Dana Carpender is a believer in keeping it simple and freshly prepared whenever possible. None of the ingredients were hard to find at my supermarket except perhaps the low-carb imitation honey that shows up in a few recipes. Of the dozen or so main dish recipes I tested in 200 LCSCR I can honestly say that seven were big hits with my family, a few were just okay and just one was bad. All of them cooked on time and just as predicted. There were some very satisfying desserts toward the end, with several variations on cheesecakes and custards that turn out splendidly in my slow cooker. Although I do not normally have a use for appetizer recipes, there is even a section for that - which contains an outstanding hot artichoke dip.
I am impressed with the author's diligence in keeping most recipes under 10 grams of net carbs per serving. Dana really does stick to the universal "rules" of low carb dieting; lots of veggies and meats, occasional artificial sweetening, a sprinkling of fruits now and then and a bare representation of grains and sugars -- and only when absolutely necessary for flavor, never as filler. She is good at innovating more nutritious subs for common starchy side dish ingredients; fauxtatoes (cauliflower) and mashed turnips are big players at her low carb table. Eat the 200 LCSCR way and you will probably have better, more varied natural nutrition than ever before in your typical American diet.
The recipes for lc condiments & sauces are a big bonus to those of us who suffer from sticker shock at the supermarket's low carb pricing practices. Readers of her other lc recipe books may find some of these items familiar, but hey, it is convenient to have them all in one place. And as for convenience, well...slow cooking is the essence of convenience to modern time-challenged dieters.
Did I make it sound as if this book is one of the best kept secrets for low carbers? I hope so, because it is.

Hooray once again for Dana Carpender! These are really delicious and fast to prepare, as advertised. You won't need a lot of crazy ingredients. There's usually something I can make from my pantry and freezer, and my husband has been enthusiastic about each recipe we've tried.
For each recipe, she gives you the counts on total carbs, fiber, and net carbs, as well as grams of protein. She doesn't give you the fat grams, but most of the recipes seem to use moderation in the use of oils and fats. There also aren't a lot of artificial sweetners in her recipes; just a tsp of Splenda here and there as needed.
You get 13 chapters of 15-minute recipes: Eggs, Tortilla Tricks (low-carb tortillas, of course), Burgers (no buns of course), Poultry, Fish and Seafood, Steaks and Chops, Main Dish Salads, Skillet Suppers, Slow Cooker Meals, Side Dishes, Soups; Condiments, Sauces, Dressings, and Seasonings, and Desserts.
Her burger recipes are really juicy and awesome. They always make my husband happy. Her Main Dish Salads are really creative and range from things you would serve to company, like Italian Roast Beef Salad, Satay Salad, and a lovely crab and avocado number, to things people will be happy about in packed lunches, like Egg Salad Francaise, Curried Tuna Salad, and a cottage cheese/tuna concoction that is actually very tasty and can be whipped up in 5 minutes flat!
I also like the Skillet Suppers, which include a ground beef skillet with the flavor of stuffed cabbage, a couple of asian-flavored creations, chicken alfredo, farm fry, Spanish "Rice" and Fried "Rice" (where "Rice" equals cauliflower).
The meat, poultry, and seafood sections are pretty much what you'd expect, but the flavors are awesome, and she really does keep it under 15 minutes.
In the dessert section, she has some sumptuous creamy coffee drinks and some things to do with fruit, along with carb counts for servings of various fruits.
I need to explore the condiments section further, because it looks like there's some gold in those hills, too.
I love how many vegetables we're eating with this cookbook! In fact, these recipes could get your kids eating more veggies, too. She gives you hints about serving the recipes to your carb-loving family, too, such as noting where brown rice (or her delicious Cauli-rice) would be a good addition.

Without going into too many details, let me just say that THIS COOKBOOK is the only reason my wife and I are still on the Atkins diet. We bought four cookbooks (all highly recommended), only to find that, while providing tasty recipes, three of the cookbooks asked for all manner of "fancy" ingredients. Stuff not normally found in our "average" kitchen. Expensive stuff. And many of the recipes weren't quite as low-carb as we had hoped (20g for one serving?).
Lauri's cookbook took care of those problems. I think the only "fancy" ingredients we had problems with were Kitchen Bouquet (it was in the gravy section at the store) and shallots (never had one before). The rest is just plain, everyday ingredients. And low-carb? All of her recipes list the nutritional information right there. It's nice to eat a large, tasty dinner with only 2.3g per serving! Most of the recipes are below 10g, and many are below 5g. Serving size is very generous.
I consider this book to be the best diet/way-of-eating investment I've made so far. This cookbook is just too good to pass up.

I have to say that I use Sharron's 'lo-carb' cuisine book almost every day. I've had parties, holidays, you name it and have used this book to everyone's delight! Really, I haven't found one recipe we haven't loved yet.
When I started eating low carb I quickly became bored with what I thought my options were. I felt discouraged because I couldn't imagine eating another cheeseburger, but I liked the health benefits this new way of eating was giving me. I picked up this cookbook, and all of that changed. There were so many tasty options available now- I couldn't wait to start trying recipies. The Fake Fudge and Silky Choco-Peanut Butter Pie are lifesavers!!!
The funny thing is, before I found this book I hated cooking. In fact, I just about knew how to boil water, literally, and that was it. My whole family is amazed how I've become "domesticated" now that I cook/bake all the time, but the truth is I have so much fun using Sharron's recipies and loving what turns out!!! You will too- I highly recommend this book!

Was excited to see that there was a new book out by Dana. Wondered why I hadn't heard about it on her web site, so I emailed her asking about it. (No response)
So then I find out, after having paid for it, that this is a compilation of several of her previous low carb books, all of which I already own. If you already have her other Low Carb books, don't buy this one. If you want to dip your toe into Dana Carpender's low carb cookbooks and don't own any of them, then this would be a good place to start. You can sample recipes from many of her books this way, and if you like what you try then you can spend the money on the other books to get a more comprehensive collection.

Making the adjustment to low carb has meant learning a whole new way to cook. Before I discovered this book, other recipes I've tried have been bland or required too much prep time.
Not this one. From the very first page, I was able to hit the ground running, since the book comes compete with WEEKLY shopping lists and recipes that take a short time to throw together but taste like they've taken all day to cook. We enjoyed Cube steaks with onion gravy, Thai Shrimp, Skillet Chicken Mediterranean and more.
Don't be scared by the "exotic" sounds of some of the recipes. This is family cooking, NOT something that you could only eat if you had the most refined of palates. If your kids aren't fish lovers, you might want to keep some simple alternatives on hand but on most nights, they should be able to eat the same menu as the "Low carbers".
ONE caveat - Some of the recipes are designed for a crockpot. I don't have one and I found it simple to adjust the cooking times. It was no big deal. But do keep in mind that at least one recipe a week is designed for a crockpot. Again, this wasn't a big deal to me, even without one.
In every other way, the book is perfect for our needs and we've branched out into newer, better recipes than before. Thanks, Leanne!

When I read the first review, of this book posted here, I thought, this person doesn't get it. Linda Gassenheimer has created a very smart collection of recipes which she groups in three stages of a low-carb diet. The recipes in LOW-CARB MEALS IN MINUES are based on three separate 14-day menu plans for beginning, middle and advance low-carb lifestyles. Each recipe in the menu is part of a particular 14-day plan so that all fat intake is planned. You may get an individual recipe that seems to have more fat than it should, but Gassenheimer has compensated by offering recipes with less fat for breakfast or dinner. Most recipes found in such books as The Zone, Sugar Busters and Dr. Atkin's New Diet Revolution, are not very appetizing. This books is the exception.
I'm a cook so I want to good food and Ms. Gassenheimer, a Cordon-Bleu trained teacher, host of her own NPR food show and James Beard Award-winning author of DINNER IN MINUTES (based on her syndicated column) offers delicious, easy, quick and healthy recipes that the low-carb dieter can live with. Ever try to buy breakfast in a coffeshop or a take-out? Most breakfast items are loaded with carbs--bagels, danish, cereals, bread, french toast, pancakes, waffles, hash brown potatoes--you name it--loaded with carbs. Gassenheimer takes the guess work out of this difficult to organize meal. There are even desserts to enjoy.

So you're on a low carb diet, looking good and feeling great, but your family is definitely on a high carb diet and getting tired of the plain meat dishes you've been serving up lately. Or maybe you are the one who's tired of them. You would like to be able to expand your low carb recipe list, but you don't have a lot of time to spend on the fancy schmancy rigamarole that some low carb cookbooks require. If only you could have your fine palate and your waistline both satisfied...
Say no more my meat-eatin' bretheren! The Everyday Low Carb Slow Cooker Cookbook was literally the answer to my prayers some months ago. As a mom of two small boys and wife to a very picky man I was having a hard time keeping everybody happy at the dinner table while I watched my weight; the "two-entrée meal" was becoming the norm and it took way too much time. In my high carb days I had used my blessed time saver, the crock pot, regularly but recently it was gathering dust on the top shelf. Thank the Lord I can put it to work again and regain my time/sanity.
Now I have to try a minimum of six recipes before I feel that I can review a cookbook with fairness. The recipes that I have completed from TELCSCC are:
Seafood Crustless Quiche (I didn't miss the crust and neither did they - Fabulous!)
Orange Pork
Sausage and White Bean Soup (my dh literally told me it was the best soup ever, bar none)
Chicken with Sun-Dried Tomatoes and Artichokes (rich and hearty, a complete meal)
Chicken with 40 Cloves of Garlic (yes, really!)
Pesto Beef with Grape Tomatoes and Fresh Mozzarella
I think the genius of this cookbook is that the authors recognize that low carb dieters are not only just as busy as everybody else, but also come in a variety of skill levels in the kitchen. Accordingly, there is a special section at the beginning just for the quick'n'easy crowd that features fewer ingredients and timesavers like canned food and packaged mixes to add to your fresh meats and veggies. Believe it or not, the Pesto Beef recipe was one of these! Not that the more "complicated" recipes are that much longer or harder, believe me: the authors make it clear that since slow cookery is all about convenience, their mission is to keep it as simple as possible without sacrificing taste. It would appear that their mission was successful.
In many cases these recipes are so loaded with veggies and hearty broth that you won't need to make a salad or a side dish and nobody will even notice. There are so many more that I haven't gotten to yet, but I'm dying to try the desserts next; Peanut Butter Fudge Cake with Peanut Butter Fudge Drizzle, Coconut Custard, and Pumpkin Pudding, which is promised to be like the pie without the crust. Judging by my success with the quiche, the slow cooker is a natural with those eggy custards and puddings (averaging about 3-4 hours on low).
I would compare this cookbook to Mable Hoffman's Crockery Cookery (the high-carb "bible" for slow cookers) in terms of quality & variety of recipes and simplicity of use. My family has had no complaints since I've started using it, in fact they like TELCSCC dishes better than many of my higher carb dishes. I believe that this is truly the answer for the lifestyles and tastes of a modern health-conscious Americans.

I got this right before Thanksgiving, which I would be hosting for the first time, and the few recipes that I've tried turned out great! I served the stuffing, the green beans amadine, and the butternut squash, and they all went over quite well. My mom (who is really hard to please) enjoyed them all and commended me on serving such a healthy Thanksgiving meal. What I also like about this book are the many dessert recipes. I tried the ranger cookies today and MAN, are they good! Can't wait to try the cheesecake, and the pumpkin pie. Highly Recommended.
