Chicken...The Ooooold standby!....Whether you are doing a high protein diet,dinner on budget,entertaining dinner guests, or just looking for some new and flavorful recipes to jazz up your meals, this "Williams-Sonoma: Chicken" cookbook should meet your needs.
There are recipes for any occasion. The book is sectioned to easily find what your looking for. In 'The Classics' you'll find everything from how to roast the perfect chicken,to chicken pot pie. 'Spicy Chicken and Basil Stir Fry' and 'Chicken Saltimbocca' are among the easy fixes in 'Quick Suppers'. There are impressive recipes for 'Dinner With Friends", healthy 'On The Grill" meals and even a section to help you figure out great ways to prepare the leftovers!
The recipes and text by Rick Rodgers have good instuctions and are easy to follow. Most of the ingrediants may be found year round in your local market. Each recipe has a full page colorful picture of what the result might look like, and even if they don't look exactly like the picture, don't worry, they are still delicious and flavorful changes from the same old thing . Each recipe page also has an inset with some other helpful information. How to grind spices,using skewers,perfect pasta, are among the useful tidbits.
If you are a little tired of chicken, there are also included a few tempting dishes made with turkey, duck and quail. You'll find helpful tips on carving, making stock and how to choose and store chicken. There's a nice glossary and Index as well.It's a great collection with many choices.
Forget the Colonel....You'll get all the praise on these fabulous meals!.....enjoy.....Laurie

Chicken, chicken, and more chicken. From appetizers to soups, from entrees to casseroles, this cookbook covers it all. Simple, easy instructions and ingredients found in most pantries, "The Rotisserie Chicken Cookbook" gives recipes using that infamous, hot rotisserie chicken found in most grocery stores. My only venture before was making soup from the carcass.
The "Gingered Peach Chicken and Rice" is to die for! Using fresh peaches as well as ? cup preserves and, my favorite spice, ginger, gives a wonderful sweet and sour effect, with just a little zing from the red pepper flakes. As suggested, serving it with jasmine rice was wonderful. I can guarantee there will be no leftovers.
I also tried the "Grapefruit Chicken Salad." I never thought about combining grapefruit and chicken before and found it very appetizing. Of course, adding ? chopped fresh basil topped it off very nicely. Served on a bed of spring greens and sprinkled with toasted almonds made this dish perfect for a light dinner.
"The Rotisserie Chicken Cookbook" is a keeper for sure! Most of us are so busy we don't have time to roast a chicken or let alone wait for it to cook on a rotisserie. Michelle Ann Anderson solved our dilemma.

A friend recommended this book to me a few years ago - and I have been thankful ever since! Easy to follow, with easy to find ingredients, and every recipe so far has met with rave reviews from family and friends. I have alot of cookbooks, but this is the one that I use often, always with outstanding results, and recommend to friends that are interested in recipes that result in fresh, lively flavors with no more than 20 minutes or so of preparation!! REALLY GREAT BOOK!

If I didn't own so many Cook's Illustrated books, this book would be five stars. Because I own the other books, I've seen many of the recipes before. Repeats aside, this is still a wonderful book to own. There are a range of recipes from beginner to more advanced, all presented in an easy to understand format.
The Chicken 101 section is extremely helpful. It has step-by-steps for butchering, brining, etc. I wish they would've included instructions for trussing.
There are some hidden gems in the book like a primer on gas griling. As with all CI books, there are some best equipment and ingredient recommendations sprinkled throughout. The recipes are solid and almost fail-proof. I love the CI method: provide all the background info on the recipe and then a straight-forward recipe.
The book covers everything from chicken as appetizers to leftover chicken recipes. Cool chapters are Express Lane Chicken and Chicken Dinners for Two.

This cookbook has some really fun chicken recipes and even my 12 year niece loves this cookbook. She cooked me dinner while I mowed my yard and it was delicous. We had the chicken with broccoli and macaroni and velvetta. Try it it is fantastic. Really good cookbook
