One of my personal measures for the worth of a cookbook is the number of recipes that I want to try out. With this book, I want to try nearly every single one. This particular production is a real treasure. There are scads of fresh recipes, with ingredients that can usually be found in most supermarkets. I would say that most of the dishes would fall in the category of comfort food; and few would fall into the category of low-calorie. Most of the meals prepared from this volume would appeal to a broad spectrum of people. In these days of picky eaters I can imagine few people turning up their noses at these dishes. More likely than not, they will be asking your for the recipe. This is one of the most helpful cookbooks I've come across in a long time.

Jamie Oliver writes cookbooks I look forward to reading and this fifth volume from the Anglo wunderkind chef fully satisfies my expectations.
Julia Child, Marcella Hazan, Paula Wolfert, James Beard, and Diana Kennedy write great cookbooks from which I always learn something. Thus, it is always rewarding to read works from these writers. But, Jamie Oliver's books belong to a very select few which are not only educational, they actively make you want to put down the book and go to the kitchen and start cooking. The select group of writers who can do that for me is lead by Jacques Pepin and has recently been joined by Tony Bourdain along with Peter Reinhart, Chris Schlesinger, and his nibs, Jamie Oliver. Even my culinary idols Mario Batali and Alton Brown can't evoke my passion for cooking as well as Messers Pepin and Oliver.
Appropriate to this grouping of writers, Oliver's latest effort, `Jamie's Dinners, The Essential Family Cookbook' is a perfect companion to Jacques Pepin's latest work, `Fast Cooking My Way'. Both books highlight the way the two chefs cook at home, with the focus being as much on simplicity and readily available ingredients as on speed. As I rarely cook with the intention of being done quickly, but I do appreciate a simple dish with high rewards on the palate, Oliver's book promises AND delivers on exactly the kind of book I like to go to on a regular basis, just like Jacques' work.
The theme of Jamie's last book was wrapped around his effort to train 15 deserving unemployed young people and staff a restaurant, `15' with his graduates. This book is based on a similar socially active theme of improving school lunch meals. Jamie states that he has been doing a documentary on school food programs and how they may be improved. The book gives little information about this film, but it does have a lot of material on food appropriate to school lunches.
The first third of the book is devoted to unconventional material and presentations of recipes. The first chapter gives us recipes for Jamie's `Top Ten' dishes: Sausage and Mashed Potatoes with Onion Gravy; Burger and Chips; Baked Lasagna; Jacket Potatoes (stuffed potatoes for us Yanks); Apple Pie; Roast Chicken and Roast Potatoes; Fish, Chips, and Mushy Peas; Chicken and Sweet Leek Pie; Tomato Soup; and Chicken Tikka Masala. Jamie often likes to offer some dishes as `the best'. And, I have never been disappointed with any of his `best' dishes. Many are now part of my standard repertoire. But, whether many are `the best' may be a matter of taste. His `ultimate' burger for example includes cumin, coriander, Parmesan cheese, mustard, and raw onion mixed into the burger patty. I am perfectly happy staying with my classic Julia Child recipes incorporating nothing more than sautéed shallots into the patty. But, I am sure that Jamie's version is `a tasty burger'. Even these simple dishes offer interesting techniques. The chips, for example are not fried, they are parboiled, then baked. The lasagna is bulked up butternut squash. The chicken potpie is topped with puff pastry instead of conventional pate brisee. One thing these dishes exemplify is that simple is not always easy. Jamie is not going for speed here, he is aiming at tasty, popular dishes. And, aside from the mashy peas, I suspect every dish will appeal to American tastes as much as it will appeal to our Brit cousins.
The next chapter develops an idea I have had for a book for close to a year now, and Sir Jamie got to it long before it was anything more than a notion in my head. This is a presentation of related recipes that begin with a basic preparation such as pesto, then builds on this to create four or five related dishes which use this basic preparation. Ming Tsai wrote a whole book, `Simply Ming' on this idea. Ming promoted the idea as a method for saving time. I thing Jamie is closer to the practical matter for home cooks when he pushes the ideas as a means for building a good repertoire of dishes from a few simple techniques such as a marinara sauce, roasted lamb, stewed fruit, and puff pastry.
Jamie's next chapter is on `5 minute wonders', that are very similar to the 26 recipe snippets at the beginning of Pepin's `Fast Cooking My Way'. For this chapter alone, I would have a copy of this book at my desk at work so I could pick up the ingredients for these dishes on my way home. True to Jamie's passion for fresh ingredients, most of the dishes need at least one fresh green or protein.
The chapter on sarnies (sandwiches for us Yanks) is meant to elevate this humble preparation to a level which will satisfy even the gourmet palate by being nutritious, fresh, and interesting. I am pleased to find the selection is not limited to Italian influenced Paninis.
These chapters alone are worth the price of admission, but we have 200 more pages of Oliver recipes to go. His salads are as interesting as usual with lots of original stuff and a few old standards. The chapters on soups, vegetables, pasta, meat, fish, and desserts are all up to his usual standard.
There is a rather unusual chapter at the end of the book entitled `Kitchens That Work'. It is an uncommon subject for the typical cookbook, but it fits the theme of this book, that being cooking at home. Jamie's primary premise is that his recipes can easily be done in a relatively small home kitchen, which is what he actually has in his home. There are a few simple ideas that I am sure I will include in my long-awaited kitchen renovation. Leading the pack is the notion of a cutting board tabletop for veggies, with separate plastic boards only for meats and poultry.
Very highly recommended.

This might be Sharon O'Connor's most complete dining experience, though for the music I prefer two other books by Sharon, the LIGHTHEARTED GOURMET, and ROCK N ROLL DINER, which has all those tracks from AMERICAN GRAFFITI and which I play whenever I find myself unable to visit Mel's Diner here in San Francisco.
If you are not familiar with the Menus and Music books, they are simplicity itself. On the one hand, a lavish cookbook with recipes taken from the finest restaurants in the world, and on the other, lovely music drawn from Sharon O'Connor's historic past as a musician and record producer. On the Italian CD, you get a very fun band playing background music for when you dig in to her recipes. My favorite dish here is a little something that melts in your mouth, called Faraona Arrosto con Fonduta. You won't believe you're eating something not too far removed from ordinary chicken parmesan.
But oh, the difference is delectable! If it's Rome, Naples or North Beach, Sharon O'Connor has been there, probably with Placido Domingo, the famed opera singer and a personal friend (of Sharon's, not mine). I wish!

I've enjoyed owning The Black Family Reunion Cookbook for many years, not only for its excellent recipes but also for the many narratives.
Once again, the Council has issued a winner. The recipes I've tried out of this new book have worked as well as their original cookbook. Actually, I didn't notice that these recipes are supposed to be 'healthier' until I began to write this review!
I've particularly enjoyed the black-eyed pea soup, the mustard greens and potato soup, and the collard greens and turkey wings. The pound cake recipe is standard, but the pear upside-down cake is terrific. The banana oatmeal cookies will be a hit for you. The chicken broccoli casserole is yummy!
I could go on, but I'll just say that every recipe I've tried has worked well. This is good home-style cooking, nothing too fancy, and the recipes are well written.
However, it's the stories and parables running through the book that make it special. I've always been a fan of Ms. Bethune, and the narratives here about her are particularly enjoyable.
This book is not only excellent, but it's also an excellent buy!

This beautiful book, filled with more than 150 recipes and 100 color photographs, is not your typical casserole cookbook. It takes one dish meals to a whole new level. The recipes prove that one dish meals aren't only for cold weather. They range from long simmering rich and savory winter-type meals to light fare for hot summer days. They also run the gamut from dishes that take hours to cook to ones that take 15 minutes to prepare on those busy days, though casseroles and baked dishes predominate.
Chapters include soups, stews, braises, pastas and baked dishes, sautes and stir fries and light fare. The recipes are very well-written and easy to follow, often with tips and suggestions. If you want to try something unusual and different, you'll surely find it here. In addition to deliciously updated standards such as Shepherd's Pie, Eggplant Parmesan, and Braised Beef Short Ribs, you'll find recipes for Stir-fried Squid with Basil, and Cockles with Chorizo in a Garlic, Wine and Parsley Sauce, and Saigon Subs - offerings from Brazil, Korea, Japan and the Mediterranean.
The one negative in my opinion is the number of ingredients called for that are unlikely to be available in most areas, some of which will be sending you to a food dictionary, such as galangal (an essential ingredient in its dish), duck confit, farro, Korean glass noodles, or wild lime leaves. In most instances, however, substitutions are offered.
Although it's not a book for beginners, the recipes are laid out in great detail and it's an excellent book.

When I got the cookbook as a Christmas present I was a little skeptical. Okay maybe alot skeptical. The recipes looked a little too vague; not enough precise measurements; "add a glass of wine" (big glass? small glass? 'what's up with that?')Quite frankly, it made me nervous. Cookbooks aren't supposed to be like that.
But I gave the recipes a whirl and lo and behold, they turned out! The recipes were different yet familar. A nice twist on things (sorry, no pun intended). Jamie creates recipes with layers of flavor and texture; recipes with color and style. And what is more, they were relatively simple to make. I've received rave reviews from friends and family.
But the real surprise and joy was that Jamie's approximate portions and measurements allowed me to become more of my own chef, so to speak. I guess I always felt compelled to stick to the rigidity of a receipe. What I discovered is that I was more or less forced to I play with the amounts and I did not feel that I was somehow making a mistake when doing so. It was okay to toy with this ingredient or that. This gave me confidence to explore variations. In short, it made cooking even more fun.
This is how I think the great chefs really cook: they have a game plan but they have intuition, gut instinct. When you watch the great chefs on TV rarely do you see them haul out a measuring spoon or a cup. They go by eye, by experience and by gut. And I think this is what Jamie Oliver's book has done for the reader.
Buy it, experiment with it, have fun with it.

My family is entirely from Kentucky (except for myself, I was born in New York) and I grew up on good southern cooking.Though I love to cook, I never learned to cook real southern food. I regret not taking the opportunity when my great-grandmother was alive and my grandmother is too ill to teach me now.
Sylvia's book covers many of the staple recipes my family whipped up and they are truly *easy* to prepare. She even has several more health conscious recipes for those who must have them (Southern and healthy are not synonymous).
I've prepared many of her recipes with great success. The tuna croquettes are easy and yummy! You probably already have all the ingredients in your cupboards. The smothered pork chops are to die for, and I finally can make a gravy my grand mother would be proud of! There are a few recipes I simple will not try. I wouldn't as a kid and I'm not starting now! (Eeewww chitterlings! ), but if you're adventurous or your taste bud run that way, enjoy! If you love real southern cooking, you can easily make it yourself with this book.
It's also filled with lots of interesting stories and anecdotes about her, her family and her restaurant. She's a wonderful woman whom I hope writes another cookbook soon!
