This also was my first Prudhomme book I have tried many recipes from this book without failure. I leave the fat in and everyone goes home full. Paul makes you realize what spices are all about, from the "texas red" to the " iowa stuffed pork chops" Its great. Here in my Upstate NY home I get ready for the winter by breaking out his cookbook .Tomorrow is my father in laws b-day and his request is my "Chicken Reggies" which is Pauls "Chicago Chicken Ala King" over Rigatone pasta Great book! but be prepared to buy a lot of seasonings

When one of America's most talented and best-loved chefs reinterprets the great American classics, the result is Chef Paul Prudhomme's Seasoned America, a beautifully illustrated collection of American favorites made even better. In his new book, Chef Paul transforms the plainest of dishes -- like a beef noodle casserole made from ground meat and pasta -- into delicious company fare. The humble tamale pie, lowly turkey hash, and ordinary ham loaf become truly memorable in his capable hands. His Texas Chili may be the best anyone has ever tasted. Mulacalong Chicken, a specialty of Charleston, South Carolina, has a soft curry flavor that's indescribably wonderful. He seasons traditional regional and ethnic dishes in unconventional and surprising ways that make a world of difference: thyme in the West Coast Oyster Stew, nutmeg in the New England Boiled Dinner, cardamom in Iowa Chicken and Corn Pot Pie, cumin in Oklahoma Fried Chicken and Biscuits, coriander in Brooklyn Borscht.Chef Paul's unique concept of "building" a dish to create maximum flavor and texture is used in many of his recipes, and a special section of the book explains exactly how it's done, in language anyone can understand. For example, Milwaukee Potato Soup has a base of grated potatoes for thickening and flavor, as well as two different sizes of diced potatoes for texture.Other formerly "inelegant" dishes are treated to the remarkable -- and frequently unorthodox-Chef Paul touch, to create food no one is likely to soon forget: A slow -- roasted, boneless stuffed chicken emerges juicy and brimming with flavor in Atchafalaya Boneless Roast Chicken. Indian fry bread topped with a spicy lamb stew and fresh salsa becomes the world's best Navajo Tacos.Through colorful stories, special tips on techniques, and invaluable information, you'll find all the encouragement you need to experiment with dishes you've always taken for granted. From Albuquerque Burritos to Lower East Side Latkes, Michigan Miner's Pasties to San Francisco Cioppino, Seasoned America and Paul Prudhomme will guide you step by step toward the successful creation of extraordinary American food.

Amuse-Bouche: Little Bites Of Delight Before the Meal Begins Review

Amuse-Bouche: Little Bites Of Delight Before the Meal Begins

I expected the worst when I first bought this book. You know, the usual "just five minutes from raw ingredients to table" sort of promise that ends up being as hollow as a celery stalk. This book actually delivers on its rather bold premise. The recipes are technique-heavy, but ingredient light. If you have the items on hand (some are downright exotic), you have a poretty fair chance of getting these tasty openers in your guests' mouths in very little time. This is not a cookbook for beginners, but if you are comfortable with fairly involved techniques, then you'll have a GREAT time trying out these interesting and challenging recipes. A true must-have for the complete entertainer!

Michael Chiarello's Casual Cooking Review

Michael Chiarello's Casual Cooking
Average Reviews:

(More customer reviews)
PBS' Napa Valley chef emphasizes a well-stocked pantry and fine presentation in addition to fresh, quality ingredients in this oversized, lavishly illustrated collection of California wine country Italian dishes. From Basil Chive Butter, Toasted Spice rub and Herb Oil (pantry items) to Salsa di Parmigiano and Marinated Salmon with Fennel Salad (antipasto) to Summer Corn Soup and Autumn Panzanella, Chiarello will have you willing to skip the entrée altogether. Until you get to one of his simple and satisfying pasta dishes - with Walnut and Ricotta Pesto perhaps or Salsa Rosa (roasted pepper and tomato) from the pantry. And then there's Tuscan Shrimp with White Beans, Baby Back Ribs with Espresso BBQ Sauce or Quail with Bacon and Honey. His way with vegetables offers simple variety - Sautéed Greens with Vinegar, Skillet-Fried Corn and Tomatoes, and a baked Cauliflower Alla Parmagiana that has become a staple in my house - whatever the vegetable. There are desserts too, mostly fruit with a few comfort items like Caramel Panna Cotta and an easy tiramisu, but the real pleasure comes from the savory. Leaf through the gorgeous pictures, and choose a dish - chances are you can have it on the table in half an hour - if you stock that pantry (there's even a recipe for fresh ricotta that's a must-try). Notes offer tips on technique and variations.

Mario Batali Holiday Food Review

Mario Batali Holiday Food
Average Reviews:

(More customer reviews)
preordered this book when I saw it listed, knowing anything Mario had published would have to be great. I was however a little surprised when it arrived and I saw just how small it actually was. After reading it through from cover to cover, I overcame my disappointment however, realizing that Mario had chosen only the best recipes for the holidays. As the Italian food host at BellaOnline, I am always on the lookout for Italian cookbooks that offer more than simply everyday recipes. Anyone buying this cookbook that is familiar with Mario Batali's work, will not be sorry. If you are interested in Italian recipes specific for the holidays, buy this book!

My Last Supper: 50 Great Chefs and Their Final Meals / Portraits, Interviews, and Recipes Review

My Last Supper: 50 Great Chefs and Their Final Meals / Portraits, Interviews, and Recipes

This is the first time I've felt compelled to review anything on Amazon but I'm a total foodie and I enjoyed browsing through this book so much. The photos are amazing. Each one is staged so differently and has a completely different feel. It really gives you a view into the chef's personality that I haven't seen elsewhere. In fact, some of these chefs I had only read about but had never seen a photo of, like Lydia Shire or Ferran Adria. Melanie Dunea really knows how to entertain with her photographs. I could look at them for hours. What the chefs say about their last meals is also really interesting to read. It also made me hungry. I highly recommend this book for foodies and anyone interested in the chef culture, or anyone else. It's highly entertaining and would make a great gift (I bought an extra for my friend who is also a foodie).

The I Hate to Cook Book: 50th Anniversary Edition Review

The I Hate to Cook Book: 50th Anniversary Edition
Average Reviews:

(More customer reviews)
Peg Bracken's "I Hate to Cook Book" sure has an awful lot of good, simple recipes for a book that purports not to be about cooking. It's fun, fun, fun to read and the recipes truly are simple and good.
The best thing about the book is Bracken's inimitably breezy voice. When she tells you to stir "Company Carrots" until they're well-coated, she writes, " . . . stirring so that all the strips get well acquainted with the sauce." When introducing a recipe for "Rosy Radish Salad," she prefaces the instructions with, "This next one uses up radishes and some of your canned beans." No doubt she's always eager to get beyond dinner because she wants to get out of the kitchen and be seated with her guests, enjoying the conversation! She's a hoot to read, and the recipes work. I love the recipe names: Lamb Shanks Tra-La, Elevator Lady Spice Cookies, Sour Cream Cinch No. 1 and No. 2, Philosopher's Chowder, Breakthrough Salad, Immediate Fudge Cake, Dazzleberry Tart (which begins, "If the dazzleberries aren't ripe yet, use canned cherry pie filling"), and more. Even the chapter names are funny (No. 22 is entitled "Stealing from Knowledgeable People"). Get this book if you enjoy cooking or hate cooking--it doesn't matter--but definitely get it if you like a good laugh and good, plain, simple recipes.

"There are two kinds of people in this world: the ones who don't cook out of and have NEVER cooked out of THE I HATE TO COOK BOOK, and the other kind...The I HATE TO COOK people consist mainly of those who find other things more interesting and less fattening, and so they do it as seldom as possible. Today there is an Annual Culinary Olympics, with hundreds of cooks from many countries ardently competing. But we who hate to cook have had our own Olympics for years, seeing who can get out of the kitchen the fastest and stay out the longest."- Peg BrackenPhilosopher's Chowder. Skinny Meatloaf. Fat Man's Shrimp. Immediate Fudge Cake. These are just a few of the beloved recipes from Peg Bracken's classic I HATE TO COOK BOOK. Written in a time when women were expected to have full, delicious meals on the table for their families every night, Peg Bracken offered women who didn't revel in this obligation an alternative: quick, simple meals that took minimal effort but would still satisfy. 50 years later, times have certainly changed - but the appeal of THE I HATE TO COOK BOOK hasn't. This book is for everyone, men and women alike, who wants to get from cooking hour to cocktail hour in as little time as possible.
